Description
This Cottage Cheese Flatbread recipe is a quick and easy way to make soft, warm flatbreads perfect for serving alongside curries, soups, or enjoying as a snack with cheese or hummus. The dough combines creamy cottage cheese with all-purpose flour and baking powder, resulting in a pillowy texture. Cooked on the stovetop in a skillet, these flatbreads are lightly toasted and can be flavored further with olive oil and sea salt or za’atar after cooking.
Ingredients
Scale
Flatbread Dough
- 1 Cup Cottage cheese
- 1 Cup All-purpose flour
- 1 Tsp Baking powder
- 1/2 Tsp Salt
- 2 Tbsps Olive oil (plus extra for cooking and brushing)
- 1 Egg
Instructions
- Start the Dough: Add cottage cheese, flour, an egg, baking powder, and salt to a mixing bowl.
- Bring It Together Gently: Mix everything until it forms a soft, slightly sticky dough that is workable but not perfect.
- Let the Dough Relax: Cover the bowl and let the dough rest for 5–10 minutes so it softens and becomes easier to handle.
- Divide Into Portions: Cut the dough into small, palm-sized pieces so each flatbread cooks evenly.
- Shape Each Piece: Flatten each portion into a rough circle. It doesn’t have to be perfectly shaped, just whatever feels right.
- Heat the Skillet: Warm a skillet over medium heat and brush or drizzle a little olive oil to prepare for cooking.
- Cook Each Flatbread: Place one piece of dough onto the skillet, cooking for 2–3 minutes per side until it browns, puffs slightly, and smells toasty.
- Stack and Soften: When cooked, stack the flatbreads under a towel so the steam keeps them warm and soft.
- Ready to Serve: Serve warm with curries, soups, or as a snack with cheese or hummus. Optionally, brush with olive oil and sprinkle sea salt or za’atar for extra flavor.
Notes
- Brush the flatbreads with olive oil and sprinkle sea salt or za’atar immediately after cooking for added flavor.
- Use a non-stick skillet or cast iron pan for best results and even browning.
- These flatbreads are best enjoyed warm but can be stored in an airtight container and reheated gently.
