- 1 lb. ground beef

- 1 tsp. ground cumin
- 1/2 tsp. chili powder
- 1/2 tsp. kosher salt
- 1/2 tsp. onion powder
- 1/2 tsp. paprika
- 1/2 cup low-sodium chicken broth
- 1/2 cup tomato sauce
Chipotle Mayo
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 Tbsp. chipotle sauce
- 1/2 tsp. kosher salt
Assembly
- 6 (10″) flour tortillas
- 1/2 cup queso, divided
- 1 cup red tortilla chips, broken into large pieces
- 8 oz. cheddar, shredded
- Sour cream and hot sauce, for serving
Instructions
- Spanish Rice – In a small saucepan, melt butter, toast rice, add seasonings, broth, and sauce. Cook covered for 17 minutes, then fluff with a fork.
- Seasoned Beef – Brown beef in a skillet, add seasonings, broth, and sauce. Simmer until liquid is mostly absorbed.
- Chipotle Mayo – Mix sour cream, mayonnaise, chipotle sauce, and salt in a bowl.
- Assembly – Fill tortillas with rice, beef, mayo, queso, and chips. Roll into burritos. Brown cheese in a skillet, then cook burritos until golden. Serve with sour cream and hot sauce.
