Homemade Chili Powder:
- 3 tsp smoked paprika
- 3 tsp cumin powder
- 1 tsp cayenne pepper
- 1 1/2 tsp garlic powder
- 1 1/2 tsp onion powder
- 1 1/2 tsp oregano
- 1/2 tsp mustard powder
- 1/2 tsp black pepper
Chili Sauce:
- 1 tbsp olive oil
- 2 garlic cloves, finely minced
- 1/2 onion, finely chopped
- 1/2 red capsicum/bell pepper, finely chopped
- 500g/1 lb ground beef/beef mince
- 1 tbsp tomato paste
- 400g/14 oz canned crushed tomato
- 2 beef cubes
- 1 1/2 cups water
- 3/4 tsp cooking/kosher salt
Chili Dogs:
- 6 good smoked sausages (kransky, bratwurst, half-smoke) or hot dogs
- 6 hot dog buns
- 1/2 white onion, finely chopped
- Yellow mustard
- 2 cups Colby or Monterey Jack cheese, shredded
- Plain crinkle cut potato chips (optional)
Instructions
- Chili Sauce: Sauté aromatics in oil, brown beef, add spices, tomato, water, beef cube, and salt. Slow cook for 3 hours. Thicken sauce as desired.
- Chili Dogs: Preheat oven, grill/pan-fry sausages, assemble with buns, mustard, onion, chili sauce, and cheese. Bake until cheese melts. Serve hot with optional potato chips.

- Recipe makes enough chili sauce for 8 hot dogs.
