- 2 packed cups (approx 2 breasts) Shredded Chicken
- 2 large Apples (red, green or both)
- 2 ribs of Celery, finely diced (more or less to preference)
- 1 cup / 180g Seedless Red Grapes, quartered (more or less to preference)
- 2/3 cup / 80g Walnuts (more or less to preference)
- Cress to garnish
Dressing
- 1/2 cup / 115g Plain or Greek Yogurt
- 1/2 cup / 115g Mayo
- 1 tsp Dijon Mustard
- Dash of Apple Cider Vinegar
- 1 Lemon (for juice and rubbing apple slices)
- Good pinch of White Pepper
- Pinch of Cayenne Pepper
- Salt, to taste
Instructions
- Toast Walnuts: Lightly toast your walnuts in a dry frying pan over low-medium heat until fragrant and very slightly charred, shaking frequently. Then, place the toasted walnuts in a mug and gently crush them to your desired size. Remove from the pan and leave to cool.
- Make Dressing: In a bowl, combine the yogurt, mayo, Dijon mustard, apple cider vinegar, salt, white pepper, and cayenne pepper. Mix thoroughly and taste for seasoning, adjusting salt and spices as needed.
- Combine Salad Ingredients: In a larger bowl, add the shredded chicken, finely diced celery, quartered grapes, and cooled toasted walnuts. Pour in the prepared dressing and gently mix everything until evenly coated.
- Prepare Apple Slices: Slice your apples into thin rounds, ignoring the core, to yield about 10 rounds per apple. Immediately rub each side of the apple slices with fresh lemon juice to prevent browning and add a zesty flavor.
- Assemble Bites: On each lemon-rubbed apple slice, place a spoonful of the Waldorf chicken mixture on top. Garnish each bite with fresh cress, then arrange on a serving platter for presentation.
