Potatoes
- 4 medium/large potatoes, washed and cubed

Chicken and Bacon
- 2 chicken breasts, cut into cubes
- 6 strips of bacon, chopped
Seasonings and Toppings
- 1 tbsp dry ranch seasoning
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp paprika
- 1 cup shredded mozzarella cheese
- Ranch dressing (for serving)
Instructions
- Prepare Potatoes: Wash and cube the potatoes. Toss them in a bowl with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- Air Fry Potatoes: Place the seasoned potatoes in the air fryer basket and cook at 400°F (204°C) for 20-25 minutes, shaking the basket a couple of times during cooking to ensure even crisping.
- Cook Bacon: While the potatoes cook, chop the bacon strips into small pieces. In a skillet over medium-high heat, cook the bacon until crispy. Remove the bacon and leave 2 tablespoons of bacon grease in the skillet.
- Cook Chicken: Add the cubed chicken to the hot skillet with bacon grease. Season with salt, pepper, paprika, and dry ranch seasoning. Cook until the chicken is fully cooked through, then remove the skillet from heat.
- Combine and Assemble: When the potatoes are finished, add them to the skillet with the chicken. Stir to combine everything evenly.
- Add Cheese and Bacon: Sprinkle shredded mozzarella cheese over the skillet mixture. Top with the cooked bacon pieces.
- Melt Cheese: Broil the skillet in the oven for 2-3 minutes until the cheese melts and bubbles. Alternatively, cover with a lid and keep on the stovetop over low heat until cheese melts.
- Serve: Plate the skillet mixture and drizzle with ranch dressing. Enjoy immediately.

- Adjust seasoning quantities for potatoes according to your taste preference.
- You can use other cheeses like cheddar or a cheese blend instead of mozzarella.
- If you don’t have an air fryer, roasting the potatoes in a hot oven at 425°F for 30-35 minutes works well.
- Make sure to shake the potatoes during air frying for even crispness.
