Description

Chicken Alfredo Lasagna Rolls are a creamy, comforting twist on classic lasagna, featuring tender shredded chicken mixed with ricotta and cheeses, all rolled inside lasagna noodles and baked with rich Alfredo sauce. This dish is perfect for a satisfying family meal that combines cheesy goodness and Italian flavors in an easy-to-serve roll format.

Ingredients

Units Scale

Lasagna Rolls

  • 12 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 3 cups Alfredo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Prepare the Noodles: Boil lasagna noodles in salted water until they are al dente, about 8-10 minutes. Drain them carefully and lay flat on a clean kitchen towel to prevent sticking and to cool.
  2. Mix the Filling: In a large bowl, combine shredded cooked chicken, ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Assemble the Rolls: Spread a thin layer of Alfredo sauce evenly on the bottom of a baking dish. Place one lasagna noodle on a flat surface, spread about 1/4 cup of the chicken and cheese mixture evenly over the noodle, then carefully roll it up. Place each roll seam side down in the baking dish in a single layer.
  4. Top with Sauce and Cheese: Once all rolls are assembled and placed in the dish, pour the remaining Alfredo sauce evenly over the top. Sprinkle the remaining shredded mozzarella cheese over the sauce.
  5. Bake: Preheat the oven to 375°F (190°C). Cover the baking dish tightly with aluminum foil and bake for 25 minutes. Remove the foil and continue baking for an additional 15 to 20 minutes until the sauce is bubbly and cheese is melted and slightly golden.
  6. Garnish and Serve: Allow the dish to cool for a few minutes after removing it from the oven. Garnish with freshly chopped parsley and serve warm for a delicious, comforting meal.

Notes

  • Refrigerate leftovers for up to 3 days to maintain freshness.
  • Unbaked rolls can be frozen for up to 3 months—freeze assembled rolls before baking, then thaw and bake when ready.
  • Use fresh cooked chicken for best flavor and texture, but rotisserie chicken works well too.
  • To save time, prepare the filling and assemble the rolls in advance then refrigerate before baking.
