Instructions
- Preheat and prepare dish. Heat the oven to 375°F (190°C) and grease a 9×9-inch casserole dish using avocado cooking spray or a similar non-stick spray, then set aside.
- Steam broccoli. Place a large saucepan with about 2 inches of water over medium-high heat. When the water boils, add broccoli florets and steam for approximately 2 minutes until fork tender. Drain the water and return the broccoli to the pan, then set aside.
- Mix ingredients. In a large bowl, combine the softened cream cheese and mayonnaise. Stir in garlic powder, sea salt, and pepper. Add in the grated cheddar cheese and chopped cooked chicken. Finally, gently fold in the steamed broccoli until thoroughly combined.
- Assemble casserole. Transfer the chicken and broccoli mixture into the prepared casserole dish. Sprinkle the top evenly with the remaining 1/4 cup of grated cheese.
- Bake and broil. Place the casserole in the oven and bake for 15 minutes. Then switch the oven to broil and broil for an additional 2 to 3 minutes, or until the cheese topping is bubbly and browned in spots.
- Serve. Remove from oven and serve warm. Store leftovers covered in the refrigerator for up to three days.
