Broccoli Mixture:

  • 1 tablespoon olive oil
  • 2 cups chopped broccoli
  • 1/4 teaspoon smoked paprika
  • 5 scallions, finely chopped

Cheese and Garnish:

  • 1 cup shredded cheddar cheese
  • fresh parsley for garnish

Instructions

  1. Preheat Oven: Preheat oven to 400˚F.
  2. Prepare Egg Mixture: Whisk together eggs, cream, garlic, salt, and pepper. Set aside.
  3. Cook Broccoli: Heat oil in a 12” oven-safe skillet over medium heat. Add broccoli, season with salt and pepper, and cook until tender, about 5 to 8 minutes. Stir in paprika and scallions.
  4. Combine Ingredients: Pour the egg mixture over the broccoli in the skillet. Gently stir to combine. Sprinkle the shredded cheddar cheese on top.
  5. Bake: Bake the frittata for 15 to 20 minutes, or until the eggs are set. If the top browns too quickly, cover with foil partway through baking.
