Meat and Vegetables
- 2 tsp Sunflower oil
- 500 g Beef mince (5% fat)
- 1 Onion (Peeled and chopped)
- 2 Garlic cloves (Peeled and crushed)
- 2 Green peppers (Sliced)

- 750 ml Hot beef stock
- 6 tbsp Ketchup
- 3 tbsp Mustard (Yellow/American kind)
- 3 tbsp Worcester sauce

- 3 tsp Paprika
- Salt and freshly ground black pepper (to taste)
Pasta and Cheeses
- 250 g Dried pasta
- 50 g Pickles (gherkins), chopped
- 100 g Cream cheese
- 75 g Red Leicester cheese (Grated)
Instructions
- Brown the mince: Heat the sunflower oil in a large saucepan or sauté pan over high heat. Add the beef mince and cook for 5-10 minutes, stirring occasionally until browned all over and cooked through.
- Cook vegetables: Add the chopped onion, crushed garlic cloves, and sliced green peppers to the pan. Cook together for an additional 5 minutes until the vegetables start to soften.
- Add liquids and seasoning: Stir in 500 ml of the hot beef stock, ketchup, mustard, paprika, Worcestershire sauce, salt, and plenty of freshly ground black pepper. Add the dried pasta and bring the mixture to a simmer.
- Simmer until pasta is cooked: Cover the pan with a lid and cook for 15-20 minutes, stirring occasionally. Cook until the pasta is al dente and the sauce has reduced and thickened.
- Preheat grill: While the pasta cooks, preheat your grill to high to prepare for melting the cheese topping.
- Finish the pasta: Turn off the heat under the pan. Stir in the chopped pickles and cream cheese until well combined into the sauce.
- Grill with cheese: Sprinkle the grated Red Leicester cheese evenly over the top of the pasta. Place the pan under the preheated grill for 3-5 minutes or until the cheese is fully melted and slightly golden.
