Glaze and Seasoning
- 6 tbsp. unsalted butter, melted
- 1 tbsp. honey
- 1/4 tsp. kosher salt

- 1 bunch pencil asparagus, ends trimmed
- 1 tbsp. extra-virgin olive oil
Puff Pastry & Fillings
- All-purpose flour, for surface
- 2 sheets frozen puff pastry, thawed according to package directions
- 12 slices prosciutto
- 1 (8-oz.) wheel Brie, cut into 12 pieces
- 1 large egg
- Freshly ground black pepper
Instructions
- Prepare Oven and Ingredients: Preheat the oven to 400°F (200°C) and line two large baking sheets with parchment paper. In a small bowl, mix together the melted butter, honey, and kosher salt to create the glaze. In a separate medium bowl, toss the trimmed asparagus with extra-virgin olive oil until evenly coated.
- Roll Out Puff Pastry: Lightly flour a clean surface. Working with one sheet of puff pastry at a time, roll it out into a 15 by 10-inch rectangle. Cut each sheet into six equal squares, yielding 12 squares total.
- Assemble Bundles: Rotate each square so it looks like a diamond shape. Brush the surface with the honey butter glaze. Place a slice of prosciutto on the center, folding edges as needed to fit inside the square. Add a few asparagus spears on top followed by a piece of Brie cheese.
- Fold and Seal: In a small bowl, whisk the egg with a splash of water to make an egg wash. Fold the left side of the puff pastry over the filling, brush it with egg wash, then fold the right side over and brush the top and sides with more egg wash. Season the top with freshly ground black pepper. Arrange the bundles on the prepared baking sheets. Repeat until all bundles are assembled, reserving any remaining butter mixture.
- Bake: Place the baking sheets in the preheated oven and bake for about 15 minutes or until the pastries are golden brown and the Brie has melted.
- Finish and Serve: Once baked, brush the tops of the bundles with the reserved honey butter glaze to add shine and extra flavor. Serve warm as a delicious appetizer.
