Puff Pastry and Egg Wash
- 4 sheets puff pastry
- 1 egg (beaten)
Meat Filling
- 500 g beef mince
- 500 g sausage mince
- 1 small brown onion (finely diced)
- 1 small red onion (finely diced)
- 1 medium carrot (coarsely grated)
- 2 cloves garlic (crushed)
- 1 small handful parsley (finely chopped)
- 2 tbsp tomato ketchup
- 60 ml Worcestershire sauce
- Salt and pepper to taste

- 6 tsp sesame seeds
Instructions
- Thaw and Prepare Egg Wash: If using frozen puff pastry, remove the sheets from the packet and separate them to allow thawing. Meanwhile, whisk the egg in a small bowl and set aside for brushing.
- Make the Meat Mixture: In a large bowl, combine beef mince, sausage mince, finely diced brown and red onions, grated carrot, crushed garlic, chopped parsley, tomato ketchup, and Worcestershire sauce. Season the mixture with salt and pepper, then mix thoroughly with your hands until well combined. Divide the mixture into 8 equal portions.
- Assemble the Sausage Rolls: Lay a sheet of puff pastry on a flat surface and cut it in half horizontally. Place one portion of the meat mixture along one long edge of the pastry half, shaping it into a sausage-like log. Brush the opposite long edge with egg wash. Carefully roll the pastry around the filling, sealing the edge beneath to finish seam side down. Repeat this process with the remaining pastry and filling.
- Preheat the Oven and Prepare for Baking: Preheat your oven to 200ºC (392ºF). Brush the tops of each pastry log with egg wash and sprinkle evenly with sesame seeds. Using a sharp knife, cut each log into 6 smaller pieces and place them seam side down on a baking tray lined with baking paper or a non-stick surface, spacing each piece about 2 cm apart.
- Bake the Sausage Rolls: Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown and the filling is cooked through. Remove from the oven and allow to cool for 5-10 minutes before serving.
