  1. Marinate the Beef: Add thinly sliced beef to a resealable bag with cornstarch, soy sauce, rice vinegar, egg white, sesame oil, diced garlic, and grated ginger. Mix thoroughly to coat all pieces and refrigerate for at least 20 minutes to tenderize and flavor the meat.
  2. Cook the Beef: Heat a large skillet over medium-high heat and add vegetable oil. Once hot, add the beef in batches to avoid overcrowding. Cook for about 1 minute per side until browned, then remove and set aside on paper towels. Repeat with remaining beef.
  3. Sauté the Vegetables: In the same skillet, add a little more oil if needed. Cook the chopped onion for 1-2 minutes until slightly translucent. Add Bok choy and cook for an additional 2-3 minutes until tender and vibrant green.
