Description

Delicious BBQ Turkey Sandwiches with homemade coleslaw, combining tender shredded turkey smothered in tangy BBQ sauce served on soft brioche buns, topped with a crisp cabbage and carrot slaw and dill pickles. This quick and easy recipe is perfect for summer cookouts or a flavorful weeknight meal.

Ingredients

Scale

Coleslaw

  • 1 lb green cabbage and red cabbage, shredded
  • 1 large carrot, grated
  • ½ cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1-2 tablespoons apple juice (or 1 teaspoon granulated white sugar)
  • ¾ teaspoon yellow mustard
  • ¾ teaspoon ground celery seed
  • ¼ teaspoon salt
  • ½ teaspoon ground black pepper

Sandwich

  • 2 cups shredded cooked turkey (baked or pulled)
  • ½ – ¾ cup BBQ sauce (homemade or store-bought, adjust to taste)
  • 4 hamburger buns (brioche or regular)
  • Dill pickle slices

Instructions

  1. Prepare the coleslaw: In a large bowl, combine shredded green and red cabbage with grated carrot. In a separate small bowl, whisk together mayonnaise, apple cider vinegar, apple juice or sugar, yellow mustard, ground celery seed, salt, and black pepper. Pour the dressing over the cabbage mixture and toss well until evenly coated. Chill the coleslaw in the refrigerator to allow flavors to meld.
  2. Heat the turkey with BBQ sauce: In a skillet over medium heat, add the shredded cooked turkey and pour the BBQ sauce over it. Stir continuously and cook for approximately 5-7 minutes until the turkey is heated through and coated evenly with the sauce.
  3. Toast the buns: While the turkey is warming, lightly toast the hamburger buns in a toaster oven or on a skillet until golden brown. This adds texture and prevents the buns from becoming soggy.
  4. Assemble the sandwiches: Place a generous portion of the BBQ turkey on the bottom half of each toasted bun. Top with a scoop of the chilled coleslaw and a few dill pickle slices. Cover with the top halves of the buns.
  5. Serve and enjoy: Serve the BBQ Turkey Sandwiches immediately while the turkey is warm and the coleslaw is crisp for the best texture and flavor combination.

Notes

  • These sandwiches are perfect for using leftover pulled turkey, making them a great recipe for post-holiday meals.
  • You can adjust the amount of BBQ sauce to your preference for sweetness or spiciness.
  • For a lighter coleslaw, substitute half of the mayonnaise with Greek yogurt.
  • Brioche buns add a rich buttery flavor, but regular hamburger buns work perfectly as well.
  • Leftover coleslaw can be stored in an airtight container in the refrigerator for up to 2 days.
