Ingredients
Chicken
1 1/2 lbs boneless skinless chicken thighs, cut into 2-inch pieces
1 1/2 Tbsp garlic and herb seasoning
1 Tbsp olive oil
6 skewers, metal or bamboo
Garlic Parmesan Butter
1/2 cup unsalted butter, softened
4 cloves garlic, minced or grated
1 Tbsp garlic and herb seasoning
1/2 tsp kosher salt
1/3 cup chopped fresh parsley
1/4 cup grated Parmesan cheese
Instructions
- Prepare: If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning; metal skewers do not require soaking. Ensure the skewers are long enough to fit comfortably in your air fryer basket.
- Season Chicken: In a bowl, toss the chicken pieces with olive oil and garlic and herb seasoning until evenly coated.
- Prepare Skewers: Thread the seasoned chicken pieces onto the skewers, about 7-8 pieces per skewer, ensuring they are evenly spaced.
- Cook Chicken: Preheat the air fryer to 400°F (200°C). Place the skewers in the air fryer basket in a single layer and cook for 8 minutes. Flip or shake the basket halfway through for even cooking.
- Make Garlic Butter: In a small bowl, combine softened butter, minced garlic, garlic and herb seasoning, kosher salt, chopped parsley, and grated Parmesan cheese until well mixed.
- Continue Cooking & Brush with Garlic Butter: After the initial 8 minutes, flip the skewers and brush generously with the garlic Parmesan butter. Return to the air fryer and cook for another 7 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
- Final Touch & Serve: Once cooked, brush the skewers with additional garlic butter if desired, sprinkle with extra parsley or Parmesan, and serve immediately.
