Description

This Air Fryer Bang Bang Shrimp recipe is a delicious and crispy dish that’s perfect for a quick and easy weeknight dinner. The shrimp are coated in a gluten-free panko crust and served with a creamy and spicy bang bang sauce.

Ingredients

Units Scale

For the shrimp:

  • 1 lb. extra-large white shrimp, deveined and shell off
  • 2 large whole eggs, whisked
  • 6 tbsp tapioca starch
  • 3/4 cup gluten-free panko
  • 3 small pinches coarse sea salt, divided
  • Avocado oil spray
  • 12 bulb spring onions, finely chopped (or chive)

For the bang bang sauce:

  • 1/2 cup mayonnaise
  • 3 tbsp rice vinegar
  • 1/21 tsp hot sauce or sweet chili sauce
  • 0.2 oz garlic clove, grated or crushed (about 1 large clove)
  • 1 tbsp coconut aminos
  • 1.5 tbsp ketchup
  • 2 pinches coarse sea salt

Instructions

  1. Pat the shrimp dry: Use a clean paper towel to pat the shrimp completely dry.
  2. Butterfly the shrimp: Make a slit along the back of the shrimp, cutting about three-quarters of the way through to butterfly them.
  3. Coat the shrimp: Dip shrimp in whisked egg, then starch, back to egg, and finally coat with breadcrumbs.
  4. Air fry the shrimp: Preheat air fryer, spray with oil, cook shrimp in batches at 330F for 3 minutes per side.
  5. Prepare bang bang sauce: Whisk together mayonnaise, rice vinegar, hot sauce, garlic, coconut aminos, ketchup, and salt.
  6. Serve: Garnish shrimp with spring onion, drizzle with bang bang sauce, and serve extra sauce on the side.

Notes

  • Make shrimp in two batches to ensure even cooking.
  • Press shrimp gently onto breadcrumbs to prevent them from falling off.
  • Drizzle sauce over shrimp just before serving for maximum crunchiness.
  • Butterflying the shrimp enhances texture and presentation.
  • Use extra-large white shrimp for best results.
