Ingredients
Scale
For the Chicken
- 4 (6-oz) boneless, skinless chicken breasts
- 2 teaspoons Italian seasoning
- 1 teaspoon kosher salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon ground pepper
- 1–2 tablespoons olive oil
For the Bruschetta Topping
- 3–4 medium ripe tomatoes (about 1 lb), cored, seeded, and chopped to a 1/2” dice
- 1 teaspoon kosher salt
- 2 cloves garlic, minced
- 1 tablespoon extra virgin olive oil
- 2 teaspoons balsamic vinegar
- 2 tablespoons thinly sliced basil leaves
- Ground pepper, to taste
- Balsamic glaze, to taste (optional)
Instructions
- Prepare the Bruschetta: In a mixing bowl, combine the chopped tomatoes with 1 teaspoon kosher salt and minced garlic. Mix until well combined, then set aside and allow the tomatoes to marinate while you prepare and cook the chicken. This draws out the juices and develops flavor.
- Prep and Flatten the Chicken: Place a chicken breast between two sheets of parchment paper. Fold the paper over the chicken and use a rolling pin to gently pound the breast to an even thickness of just under 1 inch. Repeat with all chicken breasts for even cooking.
- Season the Chicken: In a small bowl, combine the Italian seasoning, kosher salt, garlic powder, onion powder, and ground pepper. Brush both sides of each chicken breast with olive oil, then sprinkle and rub the seasoning mix evenly over both sides.
- Grill or Bake the Chicken:
- To Grill: Heat a grill or grill pan over high heat. Place chicken on grill grates and cook for 5-6 minutes per side, until the internal temperature reaches 165°F. Remove from grill and rest for 5 minutes.
- To Bake: Heat oven to 400°F (200°C). Line a baking sheet with parchment paper. Roast chicken breasts for 10-12 minutes or until the internal temperature reaches 165°F. Remove and rest for 5 minutes.
- Finish the Bruschetta Topping: To the marinated tomatoes, add the olive oil, balsamic vinegar, thinly sliced basil leaves, and ground pepper to taste. Stir well and adjust seasoning with more salt, pepper, or vinegar if desired.
- Assemble and Serve: Place grilled or baked chicken breasts on serving plates. Spoon generous amounts of bruschetta topping over each chicken breast. Drizzle with balsamic glaze if desired. Serve immediately.
Notes
- Pounding the chicken ensures even cooking and juiciness.
- Marinating the tomato topping while the chicken cooks intensifies its flavor.
- Bruschetta topping is best used fresh but can be refrigerated for a few hours if needed.
- Balsamic glaze is optional but adds a sweet, tangy finish.
- For extra flavor, add a sprinkle of parmesan cheese on top before serving.
